Seafood Newburg

Clams and shrimp sautéed with onions garlic and fresh basil baked with a smoked paprika bechamel and finished with brown butter gremolata.

Wine:
CMS Sauvignon Blanc

Second Course

Arctic Char

Grilled Pacific Arctic Char filet topped with rosemary and cherry compote served over wild mushroom rice pilaf.

Wine:
Hedges CMS Red Blend, Cabernet, Merlot, Syrah

Third Course

Apple Pork

Thyme rubbed, pan seared pork tenderloin topped with nutmeg apple chutney, finished with sliced almonds and served over parsnip purée.
Desert Wind “Ruah” (The breath of God) Red Blend Cabernet, Merlot, Malbec, Cabernet Franc, Syrah

Fourth Course

Northwest Lamb

Broiled Lamb Steak finished with blackberry glace and served with garlic roasted sweet potato frites.

Mixed Berry Turnover

Fresh berries finished with salted caramel and whipped cream.
