Nine Hats - Riesling
Apple Pork – Citrus brined, Rosemary marinated chargrilled pork tenderloin served on roasted garlic sweet potato puree topped with buttered apple chutney and finished with truffle oil wilted arugula.
Wine: Bookwalter - Chardonnay
Cherry Salmon – Sea salt rubbed, pan seared rare, Pacific Salmon served on ginger sticky rice and finished with a ponzu scallion cherry compote.
Wine: Bookwalter - Red Blend
Stuffed Portabella – Ground Colorado lamb and goat cheese stuffed baked portabella mushroom cap topped with carmelized onion and finished with sun dried tomato cream sauce.
Wine: Hats - Red Blend
Beef Tenderloin – Fresh Thyme rubbed roasted beef tenderloin served over flash fried fingerling potatoes topped with blue cheese gratin, finished with scallion, Rosemary raspberry syrup.
